Every vegan has an interesting story of when and why they became vegan, myself included! Here is mine…

GO VEGAN

Rewind to three years ago, the Summer of 2012.  No, I didn’t wake up and know I wanted to be vegan, I wasn’t even positive what being vegan meant. What I did know was that I didn’t like the way I felt. I was always tired and felt sluggish. You know that low energy feeling, both physically and mentally. I certainly didn’t like the way I looked either. I was about 15 pounds over the weight I wanted to be (not knowing at that time how little the actual number on the scale matters). I realized that the way I felt was probably a consequence of the way I was eating. The relationship the body has with food is unbelievable. I wasn’t eating all that clean, consuming a lot of sweets, snacking, and eating bad carbs. I knew I wanted to feel better and look better but wasn’t sure how to start the transition to a healthier lifestyle. Then I was introduced to the Beach Body Ultimate Reset.

The Ultimate Reset is a 3 week detox. Okay, okay, okay I know people go running for the hills when they hear that word. I swore to myself that I would never touch a detox either. I thought they were all unhealthy, all those master cleanses, juice thingies and such. This one is DIFFERENT. You DO NOT starve. It’s 21 days and each week there is a different phase. Reclaim. Release. Restore. You have 3 meals a day plus optional and additional snacks. The recipes are fabulous and by week 2 you are eating completely vegan. I was so excited during this time in my life, I remember it like it was yesterday. The amount of energy and mental clarity I had over those 21 days felt unreal. I was going to bed before midnight and up without an alarm clock. My body was becoming in tune with itself naturally. I couldn’t believe it was because of the foods I was eating. This was when I realized the TRUE power food has over the body. I was cleaning and organizing my whole condo and cooking all my meals. Learning and trying new foods too. I had never had beets or roasted vegetables and wow are they good!

To this day I still make some of the Reset meals like the Sweet Potato and Roasted Red Pepper Soup. So good especially for parties and holidays. The foods were tasty and not bland. (Interestingly, when I saw the recipes in Ella’s Six Weeks To Sexy Abs Meal Plan, they were along the same lines as the Reset meals so I’m psyched to try them now!) Once I completed the Reset I didn’t know what to do next. I knew I loved the feeling I had when I was on the Reset and I was afraid of loosing that feeling if I went back to eating meat and dairy. Scared and unsure where to start I decided to gradually go back to eating my old habits. I wish now I didn’t do that. I was an ice cream girl and also liked to eat eggs in the morning, chicken for dinner, oh and I thought whey protein was good for you. Shortly after adding these foods back into my routine I found that I had indeed lost that high on life mental clarity feeling.

It wasn’t until January 2013 when I committed to changing my lifestyle to a Vegan Diet. I didn’t know anyone else at the time that was vegan. Shakeology had just introduced a chocolate vegan flavor (amen) that I started drinking daily. Besides that I didn’t know what else to eat besides fruits and veggies and grains and nuts.  I was eating a lot of peanut butter (I wish it was its own food group). I hadn’t ever been a fan of tofu and I didn’t know about other soy protein sources. The STRUGGLE WAS REAL! There were A LOT of challenges to go thru to get to where I am today. I later realized it’s vital to educate yourself and surround yourself with others who are going vegan or are already vegan. This will help you tremendously instead of doing it all on your own like I did.

One challenge I faced was how strict of a vegan I was going to be.

At first I thought I was just strictly cutting out direct forms of meat and dairy like ice cream, yogurt, eggs, chicken, ground turkey, milk, cheese etc. I didn’t realize until I started reading labels how much dairy related products or ingredients are in other forms of snacks, processed foods, pastries etc. I would say for all of 2013 that’s where I struggled and learned about ingredients, and how far I was willing to go to change my diet to go fully vegan. So during this year I definitely cut out meat, but dairy was harder for me. I was a cheese lover too so I had the occasional pizza and thought it wasn’t so bad if I had a granola bar with milk chocolate dipping or ice cream here or there. I felt bad after eating it though knowing it wasn’t all vegan,  and then later on feeling bad physically because of the way it would make me feel on the inside and the mental guilt. I knew I couldn’t continue on and would have to completely cut these forms of dairy out too. Saying NO to ALL of it. It’s crazy how SO MANY foods like cookies and have dairy. Like cereals with frosted coated stuff that has dried milk, powered forms of milk, or butters in bars, shakes, syrups and flavorings at Starbucks. Its everywhere! This is something throughout the year I struggled on a personal level. Again I still didn’t have a foundation and found my niche in the vegan community. If I had that would have helped. Now I’m involved with international vegan awareness groups online and active in the local South Florida Miami Wellness Club, Plant Pure Nation, and fitness communities.

2014 was the year I ate a 100% plant-based diet. I was aware of what foods contained animal-based ingredients and avoided them. I felt in control of my body. I felt high on life. I felt good about my decision to transition to a vegan diet for the health benefits.

One question I had to answer for myself was, “How about when you are in group settings or going out to eat?” I hear it all the time, people ask me I can eat or why I cant eat that. I found it important to be patient, and no get mad. The question is usually asked because people simply don’t know. just don’t know and they want to learn. Others already have a formed opinion and will want to argue. Being in groups can be hard. Especially when choosing a place to eat. You turn into the vegan of the group, aka “ that person”. Or called the healthy one, the one that only eats rabbit food, the weird one, the different one, the boring one, I’ve heard it all. You learn to grow some tough skin and stick up for what you’re doing and why your doing it. You also learn what restaurants cook with chicken broth, oils, butters, and other animal products. You start to be aware where you can go and there ARE more options besides salad. A lot of restaurants are accommodating if you can’t find a vegan/vegetarian spot. Just tell them that you have allergies. I find saying that can make it more likely you will get what you ask for, rather then explaining the reason over and over why you are vegan. Best advice I give about this is be true to who you are and plan ahead. 🙂

Throughout 2014 and 2015 too is when I discovered there are other CHALLENGES. Remember when I was talking about those different levels of living a vegan lifestyle? Well I had come full circle back to that point again. Many vegans are vegan for health reasons, some for the animals, some for the environment, and some for all of the above. The education continued.

**Did you know that 91% of the rain forest lost to date is destroyed due to raising livestock? And that 1 acre of the rain forest is cut down every second for this**? Did you know to feed all the livestock they eat 20 TONS of grain PER WEEK?**? Did you know that 209 lbs of meat are eaten per year per person**? Did you know that it takes 250 gallons of water to produce 1 POUND of meat?*** These startling facts go on and on….

I began to watch documentaries like Cowspiracy  and get involved with the vegan community, educating myself on how living a vegan lifestyle is more then just the diet for the way it makes me feel. I knew I had a duty to do more. Next step was to learn about products that animal test. I did not want to be a consumer that promoted products and industries that test on animals. I researched cleaning products, hygiene products, even clothes and slowly switched. This includes make-up, shampoo, soap, coats, and shoes. All our fave brands like MAC, Clinique, snf Herbal Essences animal test.

A lot of people ask WHY are you vegan and WHERE do you get your protein. Instead of getting annoyed or frustrated I feel it is my duty to answer and educate others on the world we live in and how ONE person CAN make a difference. This means more to me now then when I started 3 years ago. Like I said, everyone has a STORY. What is yours?

I was thrilled to receive my first ever Vegan Cuts Snack Box the other day. I knew it was a great concept, but I had no idea if this vegan snack bundle would live up to my hopeful expectations…

It did!

First of all, it was exciting to open and unpack the box, 1 item at a time, since I had not even looked at the preview of what was coming. Ok, so maybe I get excited easily… but I’m sure many of you would have felt the same way. It takes me a long time to go through the isles of the grocery store, looking for new products to try, reading ingredients, and making the decision to try one new product over all the others. It’s much easier and safer to stick with what you know. That’s one of the main reasons why this box was so satisfying… I got to try new products without spending the time or energy at the store. Many of the products in the box are snack size, which are often unavailable in stores.

After getting over the initial enjoyment of unpacking the box, the next test was to find out if I actually liked the snacks.  It was definitely more sweets/chocolate than I typically buy during a month period, but the deal is so good, I would feel fine about giving away an item or two to friends or clients (anything I didn’t want to keep in my kitchen, tempting me in the middle of the night)!Uptons-Naturals-BBQ-Jackfruit

So far I’ve tried the first 6 on the list above. The Bar-B-Q Jack Fruit is by far my favorite discovery thanks to this vegan snack box. All I can say is WOW! I’m not sure how long it would have taken me to have bought and tried that one on my own. I plan on giving it a full review on my blog soon because I liked it so much. My second favorite was the PB&J Bar (amazing on-the-go snack), followed by the Peanut Butter Cups. The Chocolate Bar was incredible too. The Fruit Roll-Up was so tiny it was hard to judge (I have a feeling even a full size one wouldn’t make enough of a snack to be worth it.) The Protein Chips were the only snack I didn’t enjoy… they tasted like crispy cardboard. veganegg Follow Your HeartI had been eager to try the VeganEgg since it came out months ago so I was thrilled to get this sample. I scrambled the VeganEgg as directed and it came out with the look, feel, and I think taste (it’s been 20 years since I’ve eaten egg) of scrambled eggs. The creamer will be opened when my mom comes to visit soon (she is a coffee and creamer person. And last, the chocolate cake is something I’ll make when the spirit moves me… I’m psyched it’s so easy to make though!

Breathe from your abdomen for optimal health and relaxation.

Breathing is something we shouldn’t have to think about, we are born knowing how to do it. Unfortunately, as we grow older and enter into our professional lives, we encounter more and more stress and sacrifice our health for our livelihood.”

Look at the way a newborn baby breathes. Watch as the baby lays there, on his/her back, as the belly rises with each inhalation, and falls with each exhalation.

Now watch the way a typical adult breathes. Seriously, next time you’re at the office watch a co-worker on a call with a client, or in a staff meeting. Watch the chest rise and fall with each short breath.

What’s the difference? A baby doesn’t have a care in the world. All it needs is nourishment and love from it’s mother. The typical adult has many cares, many forms of stress, and usually a less than optimal way to deal with life’s stress.

If you know me, or have read my book, Abundant Health: Fitness for the Mind, Body, and Spirit, you know that what I propose for optimal health involves a program that develops the mind, body, and spirit. The best way to accomplish this is through a holistic program. I recommend eating a healthy diet (preferably a high-raw vegan diet) and coupling qigong and other energy cultivation exercises like Taijiquan or yoga, with vigorous exercises such as strength or cardiovascular training, and meditation.

This might be a tall order for many people and too drastic of a lifestyle change initially. To simplify things I created the “Mind, Body, Spirit Power Hour”, a way to fit optimal mind, body, and spirit development into a simple to follow, sixty-minute program.

I realize that even committing an hour a day can be too much initially for some people, so that leaves the question; what can you do that will begin to have an immediate impact on your health, that requires little to no time or effort? Simple. Breathe. Breathe deeply, calmly, and relaxed. Breathe from the belly, just like a baby.

Short, shallow breathing from the chest is not healthy. Long, deep, relaxed breathing from the belly is very healthy.

According to WebMD, “Deep breathing is one of the best ways to lower stress in the body. This is because when you breathe deeply it sends a message to your brain to calm down and relax. The brain then sends this message to your body. Those things that happen when you are stressed, such as increased heart rate, fast breathing, and high blood pressure, all decrease as you breathe deeply to relax.” (Click here to read more from WebMD.)

How to breathe correctly

  • Calm down
  • Breathe in deeply through your nostrils
  • As you breathe in, draw the breathe deep into your lower abdomen about 1-2″ below your navel (referred to as the lower dan tien)
  • To assist in breathing into the abdomen, visualize a balloon filling with air in your lower belly as you inhale
  • Gently exhale through your mouth, allowing the “balloon” in your belly to deflate
  • Do not force the exhale, let it happen naturally
  • At no point hold your breath, let it flow in and out, continuously without effort

Breathing is that simple, but you will be surprised at first how difficult it is to adopt this practice. Be consistent, work on making this process second nature, your stress-levels, and more importantly your health, will thank you for it!

A Great Plant-Based Bodybuilding Resource

When it comes to vegan athletes, up until now, the spotlight has primarily been on endurance athletes like Rich Roll and Brendan Brazier.  But now there is a quickly growing community of people getting into vegan bodybuilding, and more and more resources are popping up to help those who want to give it a try.

Let me start with a little story… As you may or may not know, I was named Trainer of the Month in November 2013 on the world’s most popular bodybuilding and fitness website BodyBuilding.com. Over a year went by and I realized I had not taken advantage of that opportunity to connect with readers through the comments on the post or on the forum. So I hopped on the forum, introduced myself, and basically said I’d love to connect with anyone interested in eating more plants and would be happy to answer any questions. The response was overwhelming, but unfortunately not in a positive way. I discovered people have a much easier time bashing me from the other side of a computer screen than in person! There were few people who commented who had any interest in learning more about plant-based eating. It takes a level of open-mindedness for there to be a chance of change, so I decided my energy would be better spent elsewhere.

That’s when I started checking out other websites and forums that were specifically for people interested in moving toward a vegan diet plan or wanted to take their vegan diet and performance to the next level. It was exciting to see that there were some awesome sites to explore.chris-willitts-vegetarian-bodybuilder

One site I want to tell you about is VegetarianBodybuilding.com. This one is particularly special to me because the creator, Chris Willitts, contacted me not long ago to ask if I’d be interested in participating in his interview series. I took a look and saw the quality and depth of the interviews he had done with inspiring people. Robert Cheeke, founder of VeganBodyBuilding.com was a recent interviewee for example. I was honored to be included and agree to the interview. It was a written interview, so I wrote my answers to Chris’s questions and sent them back to him. His reply was brilliant,

“Although this is well written, sometimes this feels surface deep and “safe” – it has been my experience that when we get vulnerable, specific about personal details, and cite emotions is when we have the best opportunity to pull people in to our story and engage them. This is especially important for us because we want to connect with our tribe and all of the would-be plant-based warriors.”

I took his constructive criticism and ran with it. I re-wrote my answers without holding back. I was thrilled with Chris’s response.

“This is one hell of an interview and you should be proud, way better! This feels real, and I personally connected much better – I have, we
all have, a part of our lives that is sensitive/dark, etc., and it’s always refreshing to see and hear people share their journey of
overcoming.”

Top 8 Healthy Holiday Recipes

Do you, like most of us, use the holidays as an excuse to gorge on unhealthy foods?

Are you, like most of us, also making the resolution to get in better shape and see your sexy abs in the New Year?

I’m writing this especially for you!

Let me start by saying that I am a realist and agree that we shouldn’t give ourselves a hard time for splurging sometimes. The holidays are a time of overwhelming temptations. I get it! However, if your New Year’s resolution is to lose weight and get in better shape, then over-doing it too much is really setting yourself up for failure. I’m not saying it’s impossible, but I am saying that, quite simply, the less weight you gain before January 1st, the less weight you have to lose.

Being moderate over the holidays is easy to say, more challenging to do. That’s why I wanted to come up with a list of healthy holiday recipes that will make everyone happy, especially yourself in the new year! Filling yourself up with yummy yet healthy dishes will make less room on your plate for those dishes that will contribute to packing on the pounds. So many traditional holiday dishes (vegetarian and some vegan ones included) are stuffed with bad fats/oils, highly processed grains, and refined sugars. The good news is they don’t have to be in order for dishes to be satisfying and delicious! It’s basically an easy to follow formula for a lean, strong, sexy body. This six week meal plan comes with over 100 simple plan-based recipes that I created. They are all both healthy AND delicious. I designed the plan to be practical and do-able, no matter how busy you are, and no matter if you are vegan or not. There is also a supplemental workout routine that goes along with the meal plan.

Believe it or not, these are ALL very simple, whole foods-based, quick and easy dishes to make. Plus they are super satisfying!

The other cool thing about the Six Weeks to Sexy Abs Meal Plan is that I give you specific guidelines to follow, so you can go out to eat, order in, or make your own recipes, as long as you are following the guidelines you are sticking to the plan and will have success.

If you are using the recipes, I make things even more do-able by providing you with a grocery list at the beginning of each week so you don’t have to figure out what you need. It’s right there for you to take to the store. I also give a description of any food you may be unfamiliar with, along with the best place to buy or order it. Most of the ingredients can be found at your local grocery and/or health food store, but often they are much cheaper to buy online, so I give you those suggestions throughout the plan.

Last, I provide you with a supplemental workout regiment to go with the meal plan. It consists of a combination of cross-training, cardio, and yoga. I mention that if you already have a balanced workout routine you enjoy, you do not have to follow mine in order to get results from the meal plan. If you don’t have a regular exercise regiment, or if you want to try something new, efficient, and effective, give my plan a try! Just remember, what we put in our mouths is what’s going to make the big difference when it comes to changing our bodies in a six-week period of time.

Blend Your Breakfast for Fast and Simple Nutrition!

Simple solution for starting your day off with a blast of nutrition!

If you are like me and start your day long before the sun comes up chances are that you hit the snooze alarm 3 or 12 times then never have enough time to get everything done before heading out the door and dealing with morning traffic on the way to work.

With this type of schedule the most important meal of the day often becomes the most skipped meal of the day. One of my favorite ways to get fast, and more importantly healthy, meal in on the run is to make a smoothie for breakfast. These take less than 10 minutes to make.

You can even pre-stage the ingredients the night before by storing all the fruit, seeds, and greens you plan to blend in a container in the refrigerator so that all you ha4907987ve to do is dump it in your blender, add your choice of liquid base and blend!

In addition to being easy and quick to make, green smoothies are incredibly healthy and a great way to get a ton of fruits and vegetables in your diet.

One of my favorite recipes that will give you 2 servings of fruits, 2-4 servings of greens and boost of superfoods is my typical go-to early morning breakfast.

In a high-powered blender (I use a Vitamix) combine the following:

  • 2 cups of non-dairy milk (I like almond or cashew) or water
  • 1 cup of strawberries
  • 1 banana
  • 2-4 cups of leafy greens (I like kale, spinach, collard greens, and dandelion greens — if you are new to green smoothies use equal amounts of fruits and greens until you can handle the bitterness of the greens! Then go wild with them, I usually use 3-5 cups of greens.)
  • 1-2 tbsp. of peanut or almond butter
  • 1 tbsp. of chia seeds
  • 1 tbsp. of hemp seeds
  • 1-2 tbsp. of ground flax seeds / flax meal
  • Blend for 30-60 seconds and enjoy. If you’re in a hurry throw it in a blender bottle and go!
  • Extra large Beavis and Butthead mug is optional!

Vegan-Friendly Tattoos

I have been itching for a new tattoo lately, but I want to do it right and make sure it’s vegan-friendly (and share my research with you of course)!

I would say I have two and an eighth tattoos now.  Yes, an eighth lol… I had 3 that I got done between the ages of 17 and 20. The first was a tribal design on my lower back which would in later years be labeled a “tramp stamp” (I have come to embrace my tramp stamp over the years)! The second some Chinese characters on my ankle meaning “peace, light, and secure.” And last a female symbol with tribal art right below my bikini line. Well, I don’t know if the guy was nervous or what but he royally screwed that one up and I ended up getting 6 laser sessions to remove it. It’s almost gone, but I can still see the remnants so I consider it still an eighth there. I will finish the removal process eventually! 

In the mean time, 10+ years have gone by (if I want to totally date myself), and I’ve been craving a new tattoo, one that truly represents who I am and what I stand for. I’m playing around with tons of ideas and as soon as I decide on the right one I will be ready to get it done. That’s why I want to go ahead and get the research done to make sure I end up with a truly vegan tattoo. Especially since the tattoo itself will have the word “VEGAN” in the design and I want it to spark vegan-related conversations with anyone and everyone I come across.

So here’s what I found out…

Finding a vegan tattoo shop would be the best case scenario… There’s one in Portland for example, called Scapegoat Tattoo Company. Then you have nothing to worry about! But since vegan tattoo shops are fairly few and far between, it’s important to at least find a shop where the owners and artists are understanding and helpful dealing with your request to have a fully vegan tattoo experience. In Miami, Gauntlet Tattoo for example, is one shop that uses vegan ink (they even advertise it on their website).

Some tattoo inks are made with animal products like bone char, glycerin from animal fat, gelatin from hooves, or shellac from beetles. So it’s important to ask if the tattoo shops/artists if they use vegan inks or if they can order some for you. 

Some vegan brands of ink include:

  • Eternal
  • StarBrite
  • SkinCandy
  • Stable Color
  • Electric Ink USA
  • Dermaglo
  • Intenze
  • Fusion Tattoo Ink

It will be smart to take along your own razor, since the ones they have in-house may have a gel strip made from glycerin. Green soap, which is often used, is not vegan, so using a soap like Dr. Bronner’s is safe. Also, petroleum jelly is a vegan alternative to some A&D Ointment which can sometimes contain cod liver oil or lanolin.

And of course, We’ll want the tattoo-care products to be vegan as well.

Some vegan after-care products are:

  • Ohana Organics Tattoo Butter
  • Dr. Bronner’s Body/Tattoo Balm
  • Jojoba oil
  • Coconut oil
  • Shea butter

When it comes to the safety of the ingredients in tattoo ink, we can’t rely on the FDA to help us out. They do not regulate tattoo ink. Beyond the ink, the other ingredient that carries the pigment into the skin is known as the carrier. Non-toxic versions of the carrier include purified water, glycerin (vegetable-based), and ethanol. White and black (iron) are the most toxic colors of conventional tattoo ink, and red pigments cause the most allergic reactions due to the iron oxide (rust), cinnabar, or cadmium red content. Bright and neon pigments often require plastics or chemicals so are best to avoid.

Some non toxic (and Vegan) ink ingredients include:

  • Black – carbon and logwood
  • White – titanium dioxide
  • Yellow – turmeric
  • Green – monoazo, a carbon-based pigment
  • Blue – sodium and aluminum (is that really safe?), many that contain copper are safe.
  • Red – Naphthol which can still cause a reaction
  • Purple – dioxazine and carbazole
