Christin creates delicious veggie-focused plant-based recipes (with many oil-free and gluten-free options), as well as offering tips and tools to help others live and maintain a plant-powered lifestyle.

She has a Plant-Based Nutrition certification from e-Cornell, a certification from the Forks Over Knives Rouxbe Cooking School, and has also attended Vegan Fusion plant-based cooking classes. Christin lives in Royal Oak, Michigan with her husband and cat, Chloe.

Here is a summary of what was discussed in this podcast episode:

  • Batch Cooking Tips– things I do to ensure success for the week. Note: I don’t always do this, but when I do, I do find I make healthier choices.
    • Grocery shopping on Saturday, prepping a couple hours on Sunday
    • Things I do during prepping:
      • Wash, dry and chop vegetables; place in airtight, sealed containers.
      • Chop veggies that are versatile in many dishes, such as bell peppers, mushrooms, and onions.
      • Soak nuts and seeds if required.
      • Marinate tempeh or tofu.
      • Make a couple of versatile dips or dressings that will last in the refrigerator for a few days.
      • Freeze grains- portion into 1 or 2 cup portions and freeze in freezer bags or containers.
    • Decide a few ways you can make multiple dishes with the same ingredients. I love making what I call multi-way bowls (see more info below), soups, salads, tacos, chili, etc. You can also do a stir-fry or a salad bar.

 

  • Time Saving Techniques
    • Always read recipes once or twice to make sure you have everything before going to the grocery store. Some recipes might be missing an ingredient in the ingredients list that is listed in the directions instead.
    • Plan your route at the grocery store. Once you create your shopping list, put things in order of where they are located in the store.
    • Stock your kitchen with simple bulk ingredients to use in a pinch, such as all types of grains, dried beans, pasta, spaghetti sauce, frozen and canned vegetables.  Think of a few meals you can make for dinner throughout the week and how you can use some of those same ingredients in other recipes.
    • Add veggies to everything! I try to make sure every meal I have, has at least 2 (and most of the time many more) veggies. Onions, peppers, and mushrooms are very versatile.
    • Don’t like veggies? Try a new vegetable every week (or month).
    • Batch cooking can save a ton of time! Chop veggies or prepare grains in advance. Make variations of salads with different toppings, etc. Freeze scraps of veggies and make homemade veggie broth. Pick one day for grocery shopping, another for prepping. Setting aside 90 minutes-2 hours per week is all you need to save yourself tons of time during the week.
    • Make double or triple the amount the recipe calls for. You can enjoy it for at least a couple meals, or have a healthy lunch the next day. Pack away your lunch immediately after dinner and you’ll be all set.
    • Experiment with one-pot meal recipes. It makes life a lot easier when you only have one pan to wash. These types of dishes also tend to freeze and reheat well. You can even label with cooking instructions to make it easier for you or your family to reheat.
    • Easy smoothie prep: add fruit, veggies, etc. to a blender and put in the fridge the night before. In the morning, all you have to do is take out the blender, add liquid, and blend.
    • Serve your dinner in large glass containers (instead of serving bowls) so you can go straight from the table to the fridge. Less dishes.

  2. Multi-Way Bowl– an easy option for meal ideas, and so versatile! Start with a grain. Add a protein if you want (lentils, tofu, seitan, beans, etc.). Add vegetables. And then top with a sauce. Add some toppings (nuts, seeds, etc.) Enjoy!

Going vegan and obtaining the support of friends and family is a common struggle for many who make the choice to live a vegan lifestyle. On last week’s episode Stephanie shared her story of going vegan and broke down the 5 stages that family and friends go through. 

Today Stephanie is giving 10 tips for transitioning that will save your relationships. If going vegan has put a strain on your current relationships or you want to avoid ruining your relationships as you transition to a vegan lifestyle  these ten power tips are sure to help. 

Stephanie discuss these tips in depth in this episode: 

  1. Define your boundaries.  Once Stephanie committed to veganism, she decided she was no longer going to or cook meat. 
  2. Talk about going vegan and answer questions.  Stephanie decided to use a lot of I-statements to demonstrate that she was taking responsibility for her own choices. Often times talking about veganism can challenge the way people see themselves as ethical, whole, compassionate human beings. So she plans ahead for these moments when she will be asked questions.
  3. Have a sense of humor. Because Stephanie is able to laugh at herself she believes that really rebunks that stereotype of the angry, raging vegan. And thus laughing about these things becomes easier for my family and for my relationships. Most vegans will be the victims of malicious jokes, Stepahnie says, but generally the people in our lives are really just poking fun.
  4. Get educated about nutrition for yourself and your kids. And this is the right spot for you. This program was the foundation for Stepahnie’s nutritional metamorphosis for my family. There are tons of great cookbooks and resources out there. Getting educated about nutrition is not only good for you. It’s good for your kids. And it’s good for that mom guilt too. When Stephanie knows that what she’s putting in front of her kids is nutritionally sound, then she knows that without a shadow of a doubt that mom guilt can not creep in. And if it does, she can challenge it at every level.
  5. Keep it simple. Especially if you’re cooking for a family. When Stephanie’s family got curious, she  started with breakfast smoothies. Now everyone gets a smoothie for breakfast. 
  6. Stop preparing two completely different meals. You are not a restaurant.  When Stephanie went vegan she started preparing one dish and it was always a vegan main dish. She was okay with them adding animal protein to the side themselves. but she stopped saying she was going to prepare what everybody’s dish was. She wasn’t a short order cook. 
  7. Veganize your favorite dishes. Stephanie suggests exploring new dishes with familiar flavors. One of her families favorites? Stir-frys, and mexican food. 
  8. Honor other people’s gestures and be flexible without compromising your values. Stephanie says to be appreciative of the steps that people take that might help you feel included and comfortable. Make a really big deal out of it. The one gesture Stephanie does that has never failed her? Telling her friends and family how much she loves to cook and offering to bring whatever they’d like her too. 
  9. Connect with other vegan families. Stephanie has a a great Facebook community in her local area that has meetups and suggest finding on in your local area to connect with others who are like-minded and whose beliefs are similar. 
  10. Promote vegan role models, especially if you have kids. Stephanie sees the importance to introduce her children to people that they can look up to in all aspects of their lives. 

We hope these 10 tips are useful for you and your family. We encourage you to take an honest account of where you are in your own journey and where your loved ones might be in theirs. Accept where you’re powerless and challenge yourself to control the way you respond to what’s happening because that’s really where your power is in your own response to what’s going on around you. Use these tips as you transition to navigate the tough terrain of relationships with family and friends.

Based on a recent survey we did with our listeners, going vegan without the support of your family or friends is a struggle that a lot of people share.

My story is exceptional in that I knew when I was just 7 years old that eating animals was a hard “No.” It didn’t matter to me one bit that nobody I knew was vegetarian. At 15 I fully understood the suffering of all farm animals and went fully vegan and knew my purpose in life was to save animals. My compassion for animals ran so deep that ridicule was not a deterrence. (My family followed in my footsteps and went vegetarian and then vegan as well!)

Stephanie however, represents our listeners to a much higher level. In this episode, Stephanie shares her personal story, discussing what went down each of the 4 times she attempted to make the transition to a vegan lifestyle. It took 4 attempts before it stuck, and she has dissected the reasons why, all of which are likely to resonate with others in similar positions.

In short, here are the reasons:

Attempt #1: Stephanie’s family was quick to remind her that she was raised by farmers, and that her family’s background in farming was how she was afforded a comfortable upbringing. Family guilt!

Attempt #2: Stephanie’s Insecurity as a new mom, being told by others that her children would not thrive on a plant-based diet, led her to succumb to “mom-guilt!”

Attempt #3: Stephanie’s overall lack of self-confidence caused her to give into what was comfortable and safe. She wasn’t confident in her choices, and wasn’t able to counter the criticism and ridicule from others from a place of compassion and education. 

Attempt #4 (Success!): Here are the self-realizations as to WHY Stephanie was successful…

  1. Stephanie realized that her relationships are equally important as her life choices. She concluded that other’s thoughts and feelings about her choices are not important, BUT her relationships ARE important. This is a distinction that takes a lot of self-awareness and self-confidence!
  2. Stephanie realized that she was the one changing the rules, so she was required to fuel her own progress with empathy toward the people in her life, giving up the idea of perfection in relationships. There were going to be tough conversations, and she was able to be assertive instead of aggressive.
  3. She was able to embrace a vegan lifestyle with the consideration of being the caretaker of her three kiddos. She was able to set boundaries and not succumb to handle her “mom guilt.” She had to step back and explore her conflicting feelings with, as we say in VLCA, approach her thoughts with curiosity and compassion. From that place she has been able to navigate the changing dynamics within her family.
  4. Stephanie made the transition solely about herself. She went vegan in “stealth mode,” didn’t make a big announcement until she had established her vegan lifestyle with confidence.

Once she felt good about her own journey, Stephanie started sharing her new lifestyle with her family and friends.

In doing so, she noticed that most of the time, people she told went through 5 stages. The stages, which she describes in depth in the episode are:

  1. Defiance 
  2. Resistance 
  3. Curiosity 
  4. Acceptance
  5. Embracing

Scale Obsession: How to Let Go Without Letting Yourself Go (EP 23: The Vegan Life Coach Podcast)

According to Harvard Health, for most dieters, preventing the pounds from coming back, after working so hard to lose them, is the biggest challenge. On average, people regain two-thirds of the weight that they’ve lost within two years.

One way people try to prevent gaining (or regaining) weight is through daily weigh-ins.

On one hand, this idea makes logical sense. When the number on the scale starts to increase, you know it’s time to tighten up the diet and/or hit the gym more. We hear clients say, “I’ve got to catch myself before my weight gets out of control.”

For some people, keeping a high level of awareness on small  changes in their weight can be motivating… But at what mental and emotional cost? True health isn’t just about the number on the scale… It includes mental and emotional health too.

First off, one problem is that daily fluctuations in weight is normal and to be expected due to differences in water retention from one day to the next. People often interpret a one-pound weight gain as FAT gain, and freak out. The scale doesn’t differentiate the weight of bone, fluid, muscle and fat.

The number on the scale all too often dictates a person’s mood. So what is a normal variation in weight, can literally ruin someone’s day for no logical reason.

At Vegan Life Coach Academy we talk about “finding your why.”

Next time you get on the scale we challenge you to ask yourself, “Why?”

Your answer is going to come from one of two places:

  1. FEAR. Fear of not being _____ enough. (Fill in the blank (e.g. skinny, pretty, etc.)
  2. LOVE. Loving and respecting yourself and your body so much that you make conscious and mindful choices about what you put in your body and how you move your body. (Hint: If you self-sabotage you’re not embodying true self-love.)

In this episode we explore why your obsession with the scale is causing more harm than good. Why daily weigh-ins are setting you up to stay stuck in a cycle of self-sabotage. Why constantly worrying about your weight is likely a reflection of low self-worth and shame.

What if you could focus on eating and training out of love and respect for yourself and your body? I’ll tell you! You will eat healthy, whole foods and workout the right amount so that the pounds will take care of themselves.

Perhaps you’re starting your vegan adventure for this one goal of losing a few pesky pounds or to achieve a complete physical transformation, but rest assured that you will quickly notice numerous benefits of your new vegan menu.

Veganism is so much more than a nutrition plan – above all, it is a lifestyle choice that is defined by countless health perks that will not only allow you to maintain a healthy weight, but also look and feel your absolute best.

For those just embarking on this weight-loss journey, here are a few essential steps you need to take in order for your vegan diet, workout routine and other habits to take effect all together in helping you to achieve your goals.

1. Ditch the junk foodDitch the Junk Food

The fact that it has a vegan label does not make it a healthy option, and the sooner you cleanse your diet from all the processed items, the faster you’ll see results. More often than not, highly processed foods are devoid of any healthy nutrients, so they mostly contain empty calories, processed sugar and unhealthy fats.

Another sneaky trait of processed meals is that they cause fireworks in your brain’s reward centre, thus leading to over-consumption and a feeling that resembles addiction. Loaded with artificial flavour-enhancing chemicals and other harmful substances, junk food is an instant energy source that your body will start craving, unless you switch to a healthier option.

2. Visit the local farmer’s market

Not only will you support your local economy, but you will also have insight into the origin and quality of the produce you choose. You can always find the stalls that sell organic items grown without pesticides, and base your vegan diet on all-natural, healthy and locally-grown vegetables brimming with vitamins and minerals.

If your home is ideal for a sweet treasure hunt, then you might be unknowingly supporting your own little cheat-meals that could hinder your progress. Refined sugar is an enemy in your battle for losing weight on a vegan diet. Surround yourself with healthy snack options such as fresh fruit, almonds, walnuts, or peanuts, and only a handful of these delicious munchies will keep your belly full and your diet on the right track.

4. Swap your Fruit juice

Although it’s tempting to reach for a glass of freshly-squeezed juice, once you remove the skin and pulp, you are left mostly with sugar. It’s healthier for you to eat a whole apple or an orange to use the healthy fibre, vitamins and minerals these fruits are teeming with, or to simply drink a glass of water to quench your thirst instead.

Breakfast is meant to be rich in nutrients and versatile, so if you stick to your box of sugary cereals, you cannot expect your vegan diet to do wonders for weight loss. In addition to providing your body with all the essential nutrients, oatmeal contains plenty of complex carbs, making it one of those foods with a low glycemic index.

This means that your glucose levels will be sustained for a longer period of time giving you plenty of energy, and that you will feel full much longer. Not to mention that you can combine it with countless other healthy additions, such as raisins, nuts and seeds, and make every meal differently.

6. Build a workout plan

While it’s true that 80% of your weight-loss success will depend on your diet, your exercise routine is responsible for the remaining 20%. Dependingon your current health and level of fitness, you can choose any sport you like, work out at home or at the gym, jog or join an HIIT class, but make sure to have at least three workouts a week, get the right gear and have enough sleep to maintain your progress.

Treat your workouts like a doctor’s appointment – it’s a serious commitment that requires discipline and consistency for it to take effect. Pick comfortable, suitable gym wear to help you achieve your goals, and maintain a regular sleeping schedule to allow your body enough rest to reap the rewards of your workouts.

7. Think greenPopeye-for-Protein

As a staple of a vegan diet, veggies are packed with all the micronutrients your body needs, and they are exceptionally low in calories, so you can use them as a side-dish in any meal, as the main course and as a snack without risking compromising your caloric intake. You can eat them raw, steamed, baked, or grilled, but avoid too much processing simply because they will lose their nutritional value if they are overly cooked.

8. Don’t skip protein

As the building blocks of life, proteins are your best friends in the battle against excess fat and building muscle. Since you’re not consuming animal or dairy protein, you should introduce several worthy and equally healthy protein-packed plants such as spirulina, beans and lentils, quinoa and chia seeds, to name a few, whereas you can also have a protein powder shake mixed with berries and almond milk as your ideal meal on the go.

9. Go nuts

Unless you’re allergic or intolerant, there is absolutely no reason to skip these versatile, delicious treats on your mission to lose weight on a vegan diet. A single handful of nuts can contain plenty of healthy monounsaturated fats, protein and carbs, and much like oatmeal, they have a low glycemic level, which allows them to gradually release sugar into your bloodstream, and provide you with a steady energy influx. They will also keep you full, but don’t go overboard with the amount – they are calorie-dense!

Perhaps the most important tip of them all, a step that is intertwined with every other mentioned on this list, is to listen to your body whenever you’re prepping your meals or eating. Many people prefer to sit in front of a TV or pouring too much on the plate simply because they feel hungry (or hangry) at that moment, and end up eating more food than they need.

Instead, the best mindset for losing weight on a vegan diet involves choosing healthy foods and chewing every single one of your bites into a paste, slowly and mindfully, to feel the flavour and texture, and to enjoy every meal to the fullest. This is an excellent way to control your portions, ensure healthy choices and keep your digestion up to par, all of which will let you lose weight.

As green tea has grown in popularity in Western culture, more and more health benefits of this amazing drink have been confirmed to be true. These include brain boosting properties and lowered disease risks. But one of the most popular health benefits being touted for green tea is its fat burning ability. In this article, we will separate fact from fiction regarding this popular beverage.

Facts:

While green tea does not have superpowers abilities of melting fat off your body, there are scientific reasons behind why this drink does, in fact, support weight loss and fat burning.

Green Tea Increases Thermogenesis

Thermogenesis is the production of heat inside your body. This process increases the energy (calories) expended by your body. The increase of energy results in more fat oxidation, which means your body is burning up fat for the purpose of energy. This effect is not only beneficial for weight loss, but it’s also useful for regulating already healthy weight levels.

Green Tea Contains Caffeine

Caffeine is one of the most studied stimulants in existence. It increases your Epinephrine blood levels – this sends signals to your brain to break down fat cells, making them available as energy for your body. It also increases your metabolism, meaning that your bodily processes require a bit more energy. The result is more fat being burned and used by your body.

Green Tea Has Very Low Calories

Think before you reach for that honey or sugar the next time you drink your green tea. Without additives, green tea only has about 2 calories per cup. This makes it a great alternative to plain water because you’re getting the antioxidant and flavanol benefits of green tea that water does not have. Also, it adds a nice taste. When you pass on the sweetener, the fat burning properties of green tea can really shine.

The easiest way to lose weight? Consume less food. But that’s easier said than done for most of us. Catechins (like EGCG mentioned above) have metabolism increasing benefits. On top of that, they’ve also been shown in studies to have some appetite suppressant benefits. These appetite suppressant benefits are likely related to the increased fat burning that occurs after consuming green tea.

Increases Visceral Fat Burning

We humans have two types of fat in our bodies – subcutaneous and visceral. Subcutaneous is the kind that builds up under our skin – think of the fat in our legs, arms, etc. The other kind – which is also the more dangerous kind – is known as visceral fat. Visceral fat is the fat stored in our belly, and around our organs. Visceral fat is linked to all sorts of health problems, like inflammation and insulin resistance, as well as increased cholesterol. Studies have shown that a significant portion of the fat burned after drinking green tea is visceral fat. Although there are many scientifically proven benefits, green tea is not a miracle cure. Here are a few of the common misconceptions regarding green tea.

If You Drink Green Tea, You Will Lose Weight

If only it were so simple. While green tea has many aspects that are beneficial to weight loss, it will not fix a bad diet or other poor lifestyle choices. You can’t expect to lose weight if you drink the occasional green tea but still sit around all the time, while eating pizzas and burgers. Green tea alone will not make you lose weight. But, combined with a healthy diet and consistent exercise/activity, green tea can definitely assist your efforts.

Green Tea Burns Fat

The problem with the phrase ‘burns fat’ is that many people take it too literally. When we hear ‘Green tea burns fat,’ some people think that simply drinking it will cause your body to start burning away fat. Unfortunately, this is not the case. Green tea naturally enhances the ‘fat burning’ process, if other conditions are met.

But is taking green tea supplements just as effective as drinking green tea? Scientists aren’t so sure. The main reason that real, fresh-brewed green tea is preferred over supplement form is synergy. Of course, these green tea supplements do have a few beneficial ingredients. But hardly any contain all of the antioxidants, catechins, and other helpful ingredients that real tea does.

Bikini Competition Prep – What to Expect

For those of you that have been thinking about doing a bikini competition, any fitness competition, or taking your health and fitness up a couple of levels… KUDDOS!!!

Here is a little bit about my history and how I got into this, where I’m at now and my journey. I’m currently 10 DAYS out from my FIRST VEGAN BIKINI COMP!!

So here we go, a few years ago my friend and I were talking about how cool it would be to do one of “those shows”. All the glitz and glam and how we could test our strengths to get to that level. After years of us just bouncing this idea around we both went FOR IT last year.  LESSON ONE and proof that everyone is their very own competition; her and I have VERY DIFFERENT stories. I actually started official training earlier then her  and she has already done 2 shows and getting ready for her 3rd. Here’s why! Last spring I hired a trainer and long story short after months working with him,I fired him because I was NOT seeing the results, even more my health was in jeopardy. The program he had me on was UNHEALTHY and was hurting my body internally. Very little food ( the wrong foods too) and WAY TO MUCH CARDIO ( 2 plus hours a day). He also was mentally and emotionally abusing me!!! Because I wasn’t seeing the results from this terrible plan he would tell me that it wasn’t the plan or him that everything was my fault. Very manipulative and not a good person. Once I broke away from that scenario instead of GIVING UP I knew it was just the beginning and I still wanted to achieve my goal of being a vegan bikini competitor. I searched and reached out to vegan female coaches and found my current coach. She has HELPED me tremendously. She worked with me for a few months to get my HEALTH back in check and then about 12 weeks ago I went on prep for my FIRST SHOW!!

First and foremost when you say you are going to do this or do anything for that matter, you need to be 100% and GO ALL IN!!! You have to give it your everything, all day, everyday. Be committed. The beautiful thing is that you will LEARN a lot about yourself while on prep….

I’m going to share with you guys the REAL DEAL (at least from my experience) as much as I can without making this to lengthy and p.s. not even my friends and family know all this. I want you all to know the truth, it’s not all about the glitter and shiny bling you see on stage. It takes weeks, months, years of WORK to get up there. It’s about the journey and DIGGING DEEP…knowing WHY you are doing this and yes constantly reminding yourself of it.

The first 6 weeks  I had a scheduled workout plan for each day and a weekly meal plan to follow. I was eating a flexible balanced diet made up of carbs, fats and plant protein. I didn’t feel like I was deprived at all. That is a BIG difference guys too from vegan/natural prep vs non vegan “cookie cutter” preps. STARVATION is not the way to do this. Also, my coach did not want me to fall back into Ketosis ( where I was after working with my previous coach). Ketosis is when the body is LOW on food, specifically carbs causing itself to burn body fat for fuel. Symptoms include migraines, fatigue, cravings, foggy thoughts, dry mouth, etc

The first half I was struggling with confidence. I was back and fourth thinking to myself if I had made the right decision, if I was going to be ready in time, what people were thinking when I told them what I was doing. Did they think I was crazy, that I was fat, that I was to muscular, to short,  that vegans can’t compete, what were they thinking and why did it matter?  Every Monday I checked in with my coach. I took progress pictures and weighed myself. Sometimes the scale didn’t move and I had to shift focus onto measurements changing and other non scale victories to measure my progress. As a recovered binge eating disorder girl and scale addict that was hard. It took A LOT of personal development. No matter where you are in your journey when you start and no matter how confident you are in yourself and what your doing, first thing you need to add into your routine is PERSONAL DEpersonal developmentVELOPMENT.

Not that the first 6 weeks weren’t tough with all that, but the second half is where it really kicks in. As much as my meals and plan was well balanced after week 6 I had no more cheat meal (this was typically pancakes from my FAV Miami spot, Choices Cafe)

WHAT TO EXPECT:

  1. Emotions run WILD – On top of all I’ve mentioned already about the first 6 weeks.. the emotions INTENSIFY! Can you say MOOD SWINGS?? One moment I had all the confidence in the world and happy one moment and then the next self doubt kicks in. It’s a mind battlebuff bukinu EVERYDAY. Asking myself frequently, is this worth it?  Even with all the personal development I do and leadership roles I’m in, I am human and emotions are hard to control. This part takes training too, just along with the physical strength. PREP is MENTAL. Most mornings I wake up feeling like I can conquer the world and then by the afternoon I start to question myself, I look at myself in the mirror constantly thinking how am I ever going to fit into this ity bitty bikini. I feel tired, hungry, grumpy and digging for energy to do my next workout. Ok it’s not all that bad, just depends on the day.  Like last week I felt like this every day and was in constant battle, but this week I think I’ve just now more EXCITED to see all my work coming through.  My  WHOLE DAY is planned out… when I eat, what I eat, when I workout, what I workout, sleep, posing practice etc. I’m telling you every day is challenge. At any given moment I have gone from being super happy to almost or in tears. I have cried twice in the middle of workouts, literally tears running down my face while doing lunges, squats and cardio. I know exactly why I’m doing it and its normal to have all these emotions. It’s a true testimony of strength and character. Dispute the tears I always pushed through and finish every workout. It’s not that I can’t do the workouts physically or that I dread them, its more of building the control over how I feel about the way I look and trusting the process. Having control over your minds thoughts all the time is exhausting and BIGGIE is not caring what others say about you. Sometimes I’m ON and IN THE ZONE and other times not so much. Emotions ALL OVER!! Nervous for the BIG DAY, yet excited. Other times scared, defeated, tired, drained. Oh and anxious.
  2. .  Sacrifices – Giving up time with friends, family, significant others. Giving up other hobbies,activities, and traveling. This means going out to eat, events, or whatever. I mean sure you can go but it’s 100X harder. You can’t eat anything, you  just order water and bring food, going out in general and bringing your food everywhere you go with you. Dependabsing what you are doing and answering why your doing it and how your doing it to everyone that asks you while they see you carrying a gallon of water around and your meal pack bag. How about time? Maybe you can’t even go to events anymore because they are to late at night or conflict with your workouts. I’m in bed at 9pm and awake at 4am so I can do fasted cardio for 30min and get my first meal in at 5am. I need to do this so I can make sure I get ALL my meals in for the day. If I don’t wake that pushes the whole day back meaning I will be up late trying to get all my meals finished before bed. I’d have to say I’ve done a really good job with all of this and have awesome self control when I’m out with others. Temptations while I’m  around people are no problem, it’s temptations in the house that were a weakness in the beginning. However, a big part of going out and socializing is the food aspect and so it does suck while everyone is indulging and enjoying yummy vegan food and I’m not. I love running and yoga and happy that my coach has allowed me to keep that once a week in my training schedule, but I’m not practicing as much as I use to or running races. That sucks to, but I know its temporary. I also love to travel and be able to go wherever whenever. Being on prep kinda has held me back from being able to enjoy doing that too. Had wanted to go to Europe this Spring, but postponed it because I wanted to do this first.
  3. Time: Planning everything! I have always been a pretty organized and scheduled person, might be one of the reasons I was attracted to this lifestyle and sort of training. If you armuffin snakce going out for the day or some time but not sure when you will be back you HAVE to bring everything with you JUST IN CASE! So many times I thought I could make it home in time to make foo

d because I didn’t want to bring it with me and didn’t make it. Then I would get upset and kick myself for not learning my lesson. It’s all about time, if you are suppose to eat, DO IT! Which often times means I’m eating salad in between red lights and snacking on rice cakes and protein muffins between appointments. Planning is essential to survival with all this. TIP: do the best you can and don’t beat yourself up if you get a few mins off schedule or behind. Yes that happens I found myself numerous times choking up and fighting back tears because of this. #hotmess

4. Relationships: A lot of people are not going to get it. So not only will you have to constantly explaining yourself, if you choose to posing but you will learn who is on your side and who isn’t. Relationships will be tested. Especially with the mood swings, those that truly care and love you will be there for you. Don’t hide the way you are feeling but I know that I have been alert of what to say and how much to say. For the most part my family support my lifestyle because they support all my decisions, but yeah they have no idea no matter how many times I tell them why I do this. They don’t understand why I can’t go out with them sometimes or if I do why I don’t eat with them. They ask me consistently why I can’t eat certain foods and they think I’m on a “diet”.  I’ve had to separate myself apart from many friends who don’t understand and surround myself with new friends who do. SUPPORT is major.

5. Hygiene: Yup I’m going there. To start I was working out once a day with one rest day a week. As the weeks went on I was working out twice a day and now sometimes 3. That means 3 showers, tons of laundry and trying to upkeep with hair and makeup is a struggle.

I’m sure I’m forgetting some things, but don’t want this to be so lengthy anyway. One more lesson learned as I said first, this is a competition with yourself. It’s about making PROGRESS not perfection (literally will go cray cray analyzing every part of your body or someone else’s if you do). No matter what happens over the next week, I know that I did my BEST.

Spring into Detox Salad

Spring into Detox Salad is CRUNCHY, SWEET and SAVORY, and is the perfect easy vegan recipe to make when your body is craving nutrients, and you need a nice and hearty salad to fill you up!

I have read that cabbage has many health benefits since it is packed with vitamins, minerals and other nutrients; cabbage is said to be helpful with weight loss, skin care / premature aging, purifying the blood, removing toxins, and the list goes on and on and on… with all that being said, I’ll have more cabbage… PRONTO! The veggies in this healthful, satisfying salad are tossed in a delicious creamy peanut sauce with a ton of ginger which is soothing to the stomach, reduces inflammation in the body, and may even help relieve muscle soreness. This special dish is topped off with sesame seeds, a great source of a variety of minerals, vitamins, and fiber. Colorful, nutrient rich, and easy to make… give this delightful recipe a try to welcome in the spring time!spring detox salad

Spring Into Detox Salad

The Veggies:

  • 1 heaping cup chopped red cabbage
  • 1 heaping cup chopped green cabbage
  • 1 heaping cup chopped kale
  • 3-4 sliced radishes
  • 2-3 ribs of celery, diced

The Dressing:

  • A hearty 2-3 inch chunk of ginger, minced
  • 2-3 garlic cloves, minced
  • 3 tablespoons fresh peanut butter
  • 1 tablespoon pure maple syrup
  • 2 tablespoons sesame seed oil
  • 2 tablespoons tamari
  • 2 tablespoons rice vinegar
  • Toasted sesame seeds (topping)

Blend together all of the ingredients for the dressing. Toss the veggies in the dressing and top with toasted sesame seeds. Eat it all up and reap the benefits!
