Shiitake and Tofu Breakfast Sandwich

Shiitake and Tofu Breakfast Sandwich with Crispy Sweet Potatoes & Roasted Garlic Aioli

A delightful and satisfying addition to your gourmet vegan breakfast menu.

Ingredients:

  • Shiitake & Tofu Scramble
  • 1 block extra firm organic tofu, pressed & drained
  • 1 large handful of Shitake mushrooms, stems removed thin sliced
  • ½ red onion, thin sliced
  • 1 tsp cayenne pepper
  • 1 tbsp turmeric
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Ciabatta rolls, toasted
  • High quality maple syrup

Roasted Garlic Aioli:

  • 1 head of garlic peeled
  • Extra virgin olive oil
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 1 cup Vegan Mayo
  • Juice and Zest of 1 Lemon
  • 1 small handful chopped fresh parsley

Crispy Sweet Potatoes:

  • 1 organic sweet potato peeled, grated and drained
  • 4 tbsp vegan bread crumbs
  • 1 tbsp extra virgin olive oil
  • ½ red onion diced
  • Canola oil
  • Sea Salt and pepper

Directions:

Step One: Roasted Garlic Aioli

Preheat oven to 400 degrees. Peel entire head of garlic and toss with extra virgin olive oil to coat. Seal well in foil and cook for 35 minutes. Remove and let cool. Add garlic, salt, pepper, vegan mayo and the juice and zest of lemon in a food processor. Combine all in food processor then remove into bowl. Fold in parsley then refrigerate.

Step Two: Crispy Sweet Potatoes

Prep Crispy Sweet Potato ingredients as noted in ingredient list. Combine all in a large bowl. Mix thoroughly and form into 3-inch patties (½-inch thick.) Coat sauté pan with canola oil then heat on med/high heat. Cook patties on each side approx. 2-3 minutes until golden brown then set aside.

Step Three: Shiitake & Tofu Scramble

Clean Shiitake mushrooms with damp cloth, then remove stems. Then thinly slice mushrooms and red onion and set aside. Cube tofu into 1-inch cubes then place in large bowl. Using hands or potato masher break apart tofu into small pieces (leave some larger pieces for texture.)shiitake-and-tofu-sandwich-1

Coat a wok or large sauté pan with canola oil then heat on med/high heat. Add mushrooms and red onion and sauté 5 minutes, stirring occasionally. Then add to the wok tofu, cayenne and turmeric and continue to sauté for another 5-7 minutes. Remove from heat set aside

Step Four: Bring it all together

Slice ciabatta rolls in half and lightly toast. Then brush with garlic aioli on both sides. Spoon on a generous amount of Shiitake & tofu scramble. Then layer sweet potato patties. Drizzle maple syrup over the potatoes. Slice and serve with a steaming cup of coffee or your favorite breakfast beverage.

Tip: You can prepare garlic aioli a day before and refrigerate in an air tight container.

Nasoya Chipotle Baked Tofu Review and Recipe

I recently had the pleasure of trying Nosoya’s latest baked tofu flavor, “Chipotle.”Nasolya chipotle tofubaked

This product gets the Sexy Fit Vegan stamp of approval as a healthy and delicious addition to your vegan diet plan!

As the company says, this TofuBaked flavor is “smoky and spicy with a touch of heat.” I would say its between mild and medium on the spiciness scale, so if you like intense heat, you can simply add some of your favorite hot sauce. This tofu makes a perfect addition to salads, sandwiches, and Mexican dishes like the taco salad below. I also love it because you can eat it as a high vegan protein snack as well. Just one piece has 8 grams of protein (there are 4 pieces per package). I’m always looking for new go-to savory vegan snacks, especially to eat right away after working out, and the TofuBaked products meet this need perfectly.

From the package I got, I ate two of the pieces as-is, without even heating them up, enjoying the flavorful snack after an intense training session. The other two pieces I used to create a new, easy vegan recipe for a taco salad to share with you!

Chipotle Taco Salad

Servings: 2 

Ingredients:

  • 4 cups romaine lettuce, chopped
  • 1/4 cup black beans 
  • 1/2 cup tomato, diced
  • 1/2 cup cucumber, diced
  • 1/2 an avocado, diced
  • 1/2 cup bell pepper of choice, diced
  • 1/4 cup black olives, sliced
  • 3 Tbsp salsa of choice
  • 2 pieces Nasoya Chipotle TofuBaked, chopped into bite size pieces
  • 2 Tbsp vegan sour cream* (optional)
  • Beanitos Chips or chips of choice* (optional)

Directions:

In a large bowl, toss together the lettuce, black beans, tomato, cucumber, avocado, bell pepper, black olives and salsa (the salsa takes the place of dressing). Serve onto plate(s) and top with the tofu and a dollop of vegan sour cream. Line the edge of the plate with Beanitos chips or chips of choice. Enjoy! 

*Tofutti and Vegan Gourmet both make one, or you can make your own such as this one from Food.com.

*Beanitos are a great alternative to regular corn chips because they are made from beans and have more protein and fiber.

Miami Beach Vegan Restaurant Review: Full Bloom

I have been living in South Beach for 13 years and although more vegan spots have been popping up in recent years, we haven’t had any gourmet vegan restaurants to choose from… until now. Full Bloom is not only upscale, but it has a killer location with a gorgeous Full-Bloom-Vegan-Restaurant-Owners-webview overlooking Biscayne Bay and the downtown Miami skyline. I can’t speak highly enough about the creative and gracious founders, Omar Barberini, Nicola Dominici, and Alessandro Farana, whose mission is, “to bring animal-caring, health conscious cuisine to food levels in Miami and provide an intimate special dining experience.”

Full Bloom is off to a great start in fulfilling their mission. The ambiance is classy, the vibe friendly, and the food delicious.

The menu can be considered “vegan fusion” with great variety. I had recruited my ex-boo to take me on a date and although he is not on a vegan diet plan, he was as impressed with the menu as I was. We started out with cocktails. Although the restaurant does not have a full liquor license, they are able to serve low a.b.v. liquor and can therefore still whip up some refreshing cocktails using fresh pressed juice. They started us out with some bruschetta that came with a shot of vegetable puree. Yum!!! We then ordered a couple appetizers… the mac and cheese side (my pick) and vegetable tempura (Rob’s pick). The mac and cheese was awesome, and it was such a large portion I had to resist eating too much! Although I rarely eat fried food so I’m no tempura expert but wow, this tempura was outstanding, and the daikon soy sauce was the perfect compliment.

Choosing a main course was a challenge because all the dishes sounded so appetizing. We ended up ordering the farro risotto of the day and veggie fajitas. By the time these dishes arrived we were both fairly full already so we had a few bites and packed the rest to go (we ended up eating it later the same night). The risotto had a delightful flavor. If you try it, just keep in mind farro is an ancient grain that has a different, more course, texture than the rice typically used to make risotto dishes. The veggie fajitas were also incredibly flavorful and delicious. If I order these again I will ask them to include grilled tofu or tempeh for the added texture and protein  The menu was packed with so many items that interested me that I was already feeling excited to go back and try out more!Full-Bloom-Vegan-restaurant-Farro-and-Fajitias-web

The service we received was impeccable. (This is a statement that unfortunately cannot be said for many restaurants in South Beach.) I can say with confidence, “At Full Bloom you can expect the nothing but the best.”

Pamela Anderson-Sexy Fit Vegan Celebrity of the Month September 2015

She may be an obvious choice but I have to recognize vegan Pamela Anderson for her ongoing effort to raise awareness about animal cruelty!

Recently launching her own online vegan cooking show, the Sensual Series,” Pam is focused on showing vegan newbies just how flavorful and sexy vegan cooking can be. I love the fact that Pamela is an ethical vegan who not only raises awareness on animal rights issues, but is now working hard to show people how to make positive, cruelty free lifestyle choices. This show is in part an introduction to the vegan cookbook she will soon be putting out. Anderson, who says she could “live off toast, peanut butter, and sweet potatoes,” created the program to expand her own repertoire, stating, “You really learn how to cook from your parents and then all of a sudden you want to be vegan and you’re like, ‘Now how am I going to cook that?’”

Pamela has done numerous PETA vegan-promoting advertisements throughout the years. Her latest in May 2015 is aimed to educate people on the amount of water wasted by animal agriculture. According to the Center for Science in the Public Interest, 55 percent of the country’s water supply is drained by animal agriculture, while  only 5 percent is used in homes. She is always willing to sex it up for these ads knowing “sex sells” and whatever sells veganism she is willing to do!

Anderson was also in the news recently to expose gross cruelty against chickens for a video that features images captured in the latest Mercy for Animals undercover investigation of Gordon Food Service.

I am certainly someone who has been breaking the vegan stereotypes since I was young, and I think the mold is quickly transforming when it comes to women going vegan… now it’s time for the men to catch up!

Vegan Club Brad PittI’m into “manly” men. They are my “type” and I’m telling you right now, a guy who fits the mold of a macho man in most ways (is a sports fan, tattoos, beer-drinker, knows how to fix things, lifts weights, etc.) AND eats plants instead of meat wins the title of REAL MAN by a long shot!

Meat and machismo have always gone hand in hand… no more! There’s nothing manlier to me than a man eating Gardein wings while he watches football and drinks a beer. And a guy putting Beyond Meat‘s Beast Burger in his shopping cart… that’s what I call sexy. Just look at some of the male celebs who are vegan, some of whom have been plant-based for 10+ years (click on each for some current info):

I have lived in Miami Beach the majority of my adult life and I will be the first to admit the dating scene here can be rough, and a successful relationship can be tough. I will say that I have been fortunate enough to have found guys that I was able to have long-term relationships with in part because they fully respected my vegan lifestyle, even though they were not vegan themselves. Respect is a requirement, along with an open mind and a desire to make moves in the direction of a healthier, more compassionate and conscious diet and lifestyle. Dating a non-vegan is not easy for me, just as dating a vegan is not easy for non-vegans. 

From the health aspect alone, when I see my man eating animal products it’s had not to think about the damage the food is doing to his health, just as it would be to see your partner smoking a cigarette. It’s a completely valid concern when it comes to the person you love. Then, when it comes to animals and the environment, it’s hard to understand how my man can put the animal cruelty and environmental destruction factors aside and continue to put dead flesh in his mouth. That being said, everyone is different in how they process information and emotions. I believe the best way to promote the vegan lifestyle I believe so strongly in, is to continue to do what I’m doing… leading by example, educating, and inspiring as many people as I possibly can in a positive, sexy way!

I may not have turned boyfriends vegan, but I can happily and truthfully say I have made a huge positive impact on the eating habits of all my boyfriends past. I look forward to meeting more and more real men who step up their game by embracing a macho vegan lifestyle in the near future if they haven’t already!

 

 

Vegan Breakfast on the Road: How to Get Creative!

Ever try to get a healthy, filling, vegan breakfast on the road?

It’s not often that you spot a “Lily’s Organic Diner” or “Wildflower Kitchen”  on the exit food signs.  You are more likely you see Aunt Sarah’s Pancakes or Denny’s where a standard breakfast is steak and eggs, and a side of fruit bathed in syrup. Far from a healthy vegan breakfast!

On my last road trip my carnivore friends picked Waffle House.  As we pulled up to the restaurant, I wondered if there would anything for me to eat given that I’m on a vegan diet plan.  I wasn’t surprised that there was no scrambled tofu on the menu. There was hash brown potatoes though.  That’s a start!Hashbrown Vegan Breakfast on the Road

After making sure the potatoes were cooked in vegetable oil, I asked if the hash browns could be the start of some sort of potato-based omelet, adding the standard omelet fillings… peppers, onions, mushrooms.  The waitress got into it.  Then the cook got into it!

When my plate arrived it was a good-looking, tasty, filling, vegan (so far as I could tell) dish…  a double order of hash browns folded over the veggie center.  Yes, a bit greasy, but it was Waffle House.

I find that sometimes when you challenge restaurant staff with your “special needs”, they rise to the occasion and your dining partners say, “That looks better than anything on the menu!”

Mixed Kale Salad with Rosemary Ciabatta Croutons and Lemon Poppy Vinaigrette

Utilizing your local Farmers Markets is one if the best ways to taste the wofarmers-market-veggiesnders of the summer growing season as part of your vegan diet plan.

We picked up tender Red Russian and green kale, organic radishes, fresh blueberries and basil. Even garlic scapes made a rare appearance! We combined all these fresh ingredients and topped with sliced almonds and rosemary ciabatta croutons. The slightly sweet lemon poppy vinaigrette brings together this summer salad sensation.

Mixed Kale Salad with Rosemary Ciabatta Croutons and Lemon Poppy Vinaigrette

Serves 4

Ingredients:

For the salad:

  • 2 cups green kale, stems removed, chopped
  • 2 cups red Russian kale, stems removed, chopped
  • 1 cup organic blueberries
  • 1/3 cup sliced raw almonds
  • 1/2 cup radish, thin slice
  • 3 garlic scapes, fine chopped
  • Small handful fresh basil, rough chop
  • 2 cups ciabatta, 1-inch cubes
  • Few springs of rosemary, chopped
  • Salt and pepper to taste

For the dressing:

  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Zest of ½ a lemon
  • 1 tsp agave nectar
  • ½ tsp poppy seeds
  • Pinch of salt
  • Pinch of black pepper

Directions:

Chop ciabatta into 1-inch cubes and chop rosemary. Heat sauté pan on med-high then coat with olive oil. Add ciabatta and rosemary, toss a few minutes until browned then set aside.

Add all ingredients for dressing in a mixing bowl and whisk together.

Prep kale, basil, radishes and garlic scapes as noted in salad ingredient list. Then combine all salad ingredients in a large mixing bowl along with croutons and toss well.

Gently coat salad with dressing and toss. Garnish with more croutons and serve immediately. Enjoy!

Tips:

Feel free to substitute with seasonal fruits. Use garlic scapes when they are available!

I caught up with the busy vegan chef (who has an infectious smile and contagious positive energy by the way) to find out more about her vision and the secret behind creating such a unique neighborhood vegan restaurant.

Ella: What is your vegan-background? When did you go vegan, why, and how has it shaped your life?

Sheryn: My family was having shake and bake chicken for dinner, and when I took a  bite of the drumstick and saw the little bones and purple veins I realized it was once a living bird. Then, the next day we had a whole baked fish with the head and everything looking back at me. I read what they did to cows and couldn’t justify eating them. As far as dairy is concerned, once I cut it out of my diet I began breathing better and all my skin issues went away. Concerning eggs, I couldn’t eat them after I found out they were unfertilized eggs. All of those factors combined pretty much made me vegan, and while people think it’s harder but for me, it actually cuts out a lot of the crap and makes life easier!

Ella: What made you think Plant Theory Botanical Cafe would be a successful concept in this location at this time?

SherynI think the standard American diet is in dire straits and finally people are making the connection that it does matter what you eat and where it’s from. The majority of fatal diseases are diet related. What better place than South beach to open a restaurant where people can enjoy healthy food that will help them look and feel their best for years and years to come?!

Ella: In what ways is your spot different than other vegan and/or healthy restaurants opening in the area?

SherynNumber one we are truly vegan without any compromises such as honey, animal by products etc… We also use organic produce and supplies, and use eco-sustainable products. Our market focus on small artisan crafters you cannot find easily in Miami. Additionally, we are 98% raw with one hot soup and globally inspired special a day. We are a community space and love sharing our space for holistic events and community gatherings.

Ella: What are your top 3 recommendations from the menu for someone to try first?

SherynWow only 3! That’s hard!
1. Raw Lasagna
2. Grilled Artichoke and Raisin Wrap
3. Raw Save the Salmon Burger
4.  Raw Picadillo Salad

Ella: What advice do you have for people who are new to the idea of veganism and are interested in moving in that direction?

Sheryn: Just try substituting one regular meal with a plant based one at least once a day then increase it as you feel better. Educate yourself… There are so many free resources and community events out there for support and great recipes.

Ella: Is there anything else you would like to share with our readers?

Sheryn: Connecting with our food allows us to pause and realize what and even how you we eating. Eating should be true nourishment for the mind body and spirit. Stop by and experience Plant Theory, it’s a great community space for everyone!

My Favorite High Protein Vegan Products

There are so many high protein vegan products on the shelves it can be hard to choose which ones to try first, so today I’m sharing my favorites to give you all a place to start! 

When I first became vegan my weight fluctuated a lot because I was eating too many processed foods. If it was vegan, I ate it, regardless of the amount of sugar, white flour, chemicals or bad fats in it. I soon realized that simple, clean and unprocessed was the way to go and these days I mainly stick to a diet of fruits, vegetables, legumes and seeds. But there are some amazing high protein vegan products out there that I use to supplement my diet. These are my favorites!

Field Roast:

Until I discovered Field Roast I had never found a veggie dog or sausage that I liked. These I love! The Smoked Apple Sage is my favorite but they also come in Italian and Mexican Chipotle. Each sausage is 240 calories and has 11 g of carbs and 26 g of protein. They come fully cooked and I often chop one up and toss it in a salad to get an extra protein and flavor boost. Field Roast also makes a host of other great products which you can check out at www.fieldroast.com. Apparently their Vegan Chao Cheese is amazing (unfortunately not yet available in Canada).

Simply Protein Chips:

Finally a high protein, vegan, savory snack! With 15 grams of protein and just 140 calories you can’t go wrong with these.  Available in BBQ Tomato (my fav), Spicy Chili, Herb, and Sea Salt and Cracked Pepper.

Gardein Turk’y Cutlet:

Gardein really is the gold standard when it comes to vegan meat substitutes. I honestly don’t know how they do it, but this cutlet tastes like a turkey cutlet…but better!  Kids love it and I am sure you could fool a few meat eaters with it too. I actually served this as my protein last Christmas dinner and it was a huge hit. Two cutlets are 260 calories with 19 grams of carbs and 22 grams of protein.

Special K Protein Cereal:

Special K Protein Cereal: High Protein Vegan Product

Ok, I’m not proud of this, but I have basically had a bowl of cereal every night before I go to bed for the last 20 years of my life.  Not while this is NOT a habit I would recommend, if you have a cereal weakness like me, I think Special K protein is your best bet. A 1 C serving has 190 calories, 33 grams of carbs and 10 grams of protein. I find it very satisfying so I usually have a smaller portion than that. It has a very slightly sweet vanilla flavor that is good on it’s own or with added fruit.

Vegan Diet Plan: The What, Why, Who, When & How

Unlike some other so-called “diets,” a vegan diet plan is somewhat of a journey to be explored and continually fine-tuned based on your experiences.

Let’s briefly cover the most basic questions:

“What?”

What is a vegan diet plan? The definition is both clear and broad. “Eating vegan” means eating only plant-based foods and nothing that is an animal, comes from an animal, or is processed using animal. That being said, as much as this may seem restrictive if you are used to eating animal products as part of your every day routine, it’s actually incredibly expansive! Discovering plant foods you’ve never even tried is part of the excitement of going vegan. 

“Why?”

Why is a vegan diet plan beneficial? The reasons are numerous and powerful. First, going vegan means doing your part to help put an end to animal suffering. Today’s factory farming of animals is horrendously cruel, and by eating and wearing animals and their bi-products you support the industries responsible for the suffering. Second, going vegan means improving your health by preventing, treating, and even curing many diseases. Heart disease, cancer, stroke, diabetes, obesity, and other top killers are often caused by an unhealthy diet containing animal products, preservatives, processed, and/or artificial ingredients. You have the power to take your health into your own hands with a vegan diet plan! Third, you can feel and look younger, more energized, and sexier by going vegan. A balanced plant-based diet improves your skin’s condition, gives you energy, drops body fat, increases circulation, improves digestion, just to name a few benefits. Last, by going vegan, you are reducing your environmental footprint and playing a role in saving our planet. Leaving future generations a healthy earth is simply the right thing to do. 

“Who?”

Who should be on a vegan diet plan? This one is simple. Everyone! Everybody will benefit from eating a whole foods plant-based diet. 

“When?”

When should you go on a vegan diet plan? Start your transition NOW! It may not work for you to make the complete switch over to a plant-based diet tomorrow, but there’s no better time than now to get your vegan diet plan put together and begin.
