The Power of Accountability

When I ask a client, “What would be most helpful to jump start you into the healthy, active lifestyle you desire,” the answer is often, “accountability.”

Does this resonate with you?

As a coach, it’s exciting to see people through the process of gaining the tools they need to successfully transform their lives. One such tool is the ability to hold yourself accountable to the commitments you make.

The problem is that most of us have had the habit of putting everyone else first (especially us women). Is this you? We fill our schedules with commitments to other people, which we will do anything to keep, including breaking our own commitments to ourselves! Doesn’t this seem silly when you really think about it?

Time to change this pattern of letting ourselves down! In the six weeks of my program, I work with my clients to chip away at these old habits that aren’t serving them. I’m there to hold clients accountable to their commitments, because that’s often what it takes to learn how to do it for themselves.

It’s a process that takes practice, but wow, how thrilling is it when the practice pays off and you find yourself healthier, happier, and more confident then you’ve ever been before?! What an elated feeling it is when, because you’re in such a great place, you’re actually able to be there for others in a much more meaningful way!

Peanut Butter Protein Pancakes

This vegan protein pancake recipe comes from the founder of Powerootz… My favorite brand of nutritional shakes!

Peanut Butter Protein Pancakes

Makes about 4-5 small pancakes.

IngredientsProtein Pancake Recipe

  • 1 scoop of Powerootz Superfood Nutritional Shake (Peanut Butter Bliss or Chocolate Peanut Butter Madness)
  • 1 scoop + 1 Tbsp of Organic Sprouted Whole Wheat Flour
  • 2 Tbsp Organic Maple Syrup
  • 1/4 tsp Baking Soda
  • 3/4 cup + 1 Tbsp Unsweetened Non-Dairy Milk
  • Pinch of Sea Salt or Himalayan Salt
  • 3/4 tsp Organic Apple Cider Vinegar (make sure to put this in last after the other ingredients are stirred up)

Instructions

  • Whisk together the Powerootz Superfood Nutritonal Shake, flour, maple syrup, baking soda, non-dairy milk, and sea salt.
  • Add the apple cider vinegar.
  • Cook on griddle or fying pan.
  • Add toppings of choice.

Tip

  • Making small pancakes works best.

Mom’s Easy No-Chicken Noodle Soup Recipe

This easy vegan soup recipe was created by my own mother on her last trip to visit me.

My mom is not much of a chef (she would tell you that herself), but when she comes to visit she seems inspired to make soups that always turn out amazing. She goes for the most simple, uncomplicated vegan recipes possible, which makes them all the more appealing. This trip she was feelin’ some vegan chicken noodle soup and it turned out fantastic! She’s all about comfort foods and this recipe definitely qualifies as one to cure a craving for comfort.
If you are trying to keep your pasta/flour intake low, you can always substitute the orzo for chickpea pasta or edamame and mung bean pasta. Another option is using quinoa (I haven’t tried it but I’m guessing it would work well). 
Here is her recipe…

No-Chicken Noodle Vegan Soup

Ingredients:
  • 1 onion
  • 3 stalks of celery, diced
  • 3 carrots, diced
  • 1 teaspoon minced garlic 
  • 1 package of Beyond Meat Grilled Chicken Strips – cut into little pieces
  • 1 32-oz box of organic vegetable broth (low sodium if possible)
  • a touch of olive oil
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried thyme
  • dash of hot sauce of choice (optional)
  • sea salt and pepper to taste
Saute the onion, celery, carrots and garlic in a little olive oil on medium/medium-low heat for 3-4 minutes. Add the Beyond Meat pieces and saute for another 3-4 minutes. Add the vegetable broth. Add the parsley, thyme, a dash of hot sauce (or whatever seasoning you like), and salt and pepper to taste. Bring to a low boil and add 1/2 cup uncooked orzo or pasta of choice. Simmer for about 20 minutes.
 
Tip: This is one of those soups that tastes even better when heated up the next day!

10-Minute Broccoli and Lentil Bowl

Dawn DebusMy friend and realtor Dawn Debus, who also takes my classes at Sobekick, recently got my book and started following the Six Weeks to Sexy Abs Meal Plan guidelines!

She wants to lose a few pounds of body fat and needed some guidance and support so of course I’m here for her. I asked her to send me any recipes she creates that fall within my vegan meal plan guidelines so I could share them on my blog. She’s like me (and probably most of you) in that she likes simple, flavorful vegan recipes that she can whip up quickly at home.  I said I didn’t mind if she didn’t have the exact amounts of each ingredients… Since the recipes are so simple, they are easy for you to customize based on what ingredients you have at home, and your individual taste.

Here’s what Dawn came up with today… I’m so proud of her!  According to her, this meal took her 10 minutes to make and is delicious!

Broccoli, Cauliflower and Lentil Bowl

Ingredients:

  • Broccoli 
  • Cauliflower
  • Canned Lentil Beans (No or Low Sodium)
  • Rosemary (Fresh if possible)
  • Dill (Fresh if possible)
  • Herbamare Seasoning
  • Red Onion

Dawn said she steamed the broccoli and cauliflower on the stove. She put lentils and red onion in a large bowl and heated them in the microwave (this would also be easy to heat in a pot on the stove if you prefer). She then added the broccoli, cauliflower, herbs and spices to the bowl of beans, mixed them together, and had herself a tasty, satisfying meal!

In case you don’t know, broccoli and cauliflower are two of the healthiest, cancer-fighting, anti-inflammatory foods on the planet and lentils are packed with protein and fiber among other nutrients. You can definitely fill your belly with this dish knowing your doing your body good!

I’m back from a week aboard the MSC Divina on the Holistic Holiday at Sea and am bringing home tons of great info and experiences to share!Holistic Holiday At Sea

Let me start by saying that it was one packed week. My good friend Anne came with me on the trip and we both agreed that the experience was a perfect mix of fun and education. One of the hardest part about the trip was deciding which classes and lectures to attend because there were so many to choose from. I couldn’t ask for a better problem to have! 

I could go on and on about the details but photos do a great job at telling the story…

The Ship:

The MSC Divina is a classy ship with great service, and our room was very comfortable. 

The Dining:

For breakfast and lunch, Anne and I went for the vegan buffet because there were so many activities we were trying to squeeze in during the daytime. We went for the sit-down dinners though, which included a 5 course meal every night! It was refreshing not to have to question the servers about how the food was made. For once, being vegan was the norm not the exception. So cool!!! Dinner was also the time we met the most interesting people from all over the country, everyone with a unique story about how they came to be on the cruise. I definitely recommend attending the dinners every night, and sitting with new people each meal.

The Excursions:

Book your excursions early! We made the mistake of waiting until the last minute and many of the excursions were booked, especially the ones that came with a vegan lunch included. This year we went to Saint Thomas, Nassau, Bahamas, and San Juan, Puerto Rico. We have a good friend who lives in San Juan so were lucky enough to have a personal, local tour guide on that stop. 

The Classes/Lectures:

There were inspirational classes and lectures of different topics offered over the course of the week by some of the world’s leading experts on nutrition, cooking, and fitness. It was hard to pick which ones to attend because I was interested in so many! I even tried a qi gong class one day, which is something I’ve always been curious about. I was thrilled that one of my all-time favorite speakers, Dr. Greger, was there, and after his last talk, I ran up to the stage to say hello and give him a copy of my book. He was so thankful and we agreed we needed to team up because, as he put it, “The paleo people are killing me!”  

The Amenities:

Holistic-Holiday-At-Sea-Gym-SpaI managed to make it to the gym early most mornings. The gym is at the very front of the ship and give you a gorgeous view of the sunrise over the water. Yoga and other classes were also offered every day at 7am as well as throughout the day as well. The ship also has a nice spa where Anne and I got an amazing massages after loosening up in the steam room and relaxing for a bit. 

The Book Signings:

There were book signings every evening. I felt so honored to be there among such inspirational authors.

I’m giving you my top 8 picks for vegan festivals and events, some based on my own experiences, others based on speaking with like-minded experts such as Vegan Bodybuilding and Fitness founder Robert Cheeke. I ran into Robert at Brendan Brazier’s book launch party last month and was able to ask about his favorites since he pretty much travels year round attending and speaking at these events!

I’m super psyched about this year’s cruise because I was lucky enough to have been invited as a special guest. Robert Cheeke told me that out of all the events he attends this is his absolute favorite (this will be his sixth year in a row on board)! I’m especially excited because some of my favorite nutrition experts (like Dr. Michael Greger), plant-based chefs, and fitness pros will be on board presenting and teaching. I’ve found that most health or wellness-focused cruises offer yoga but not strength and conditioning type classes. Not true for this cruise! There is a class for everybody and every mood, so in addition to yoga and pilates there are also boot camp and body building type of classes from some of the top names in the fitness world. And the other part about this cruise that makes it different than other health cruises is that it not only gives you the opportunity to detox and relax, but also is upbeat with a wide variety of things to do from cooking classes to snorkeling to cocktail parties… how appealing does that sound?! Then there are the awesome plant-based meals, catering not just to people eating vegan, but also those who eat gluten-free or oil-free. I just find this incredible, and I want to experience it with you all!

I absolutely adore this festival! Only in it’s third year of existence, the Seed Food and Wine Festival is a huge hit and growing rapidly. One of the things I like most about this festival is it’s focus on marketing to the main stream. Nothing makes me happier than seeing non-vegans be open-minded to learning the all the “whys” and “hows” to go vegan, and the events of this festival attract those people (along with already established vegans). 

Details for Seed Food and Wine 2016 have not yet been made public, but I’m sure it will not just match, but also exceed the quality of last year’s. 

Seed Food and Wine is described as “a weekend adventure for guests who want to sip, savor and experience conscious, sustainable plant-based living. First of all, it was exciting to open and unpack the box, 1 item at a time, since I had not even looked at the preview of what was coming. Ok, so maybe I get excited easily… but I’m sure many of you would have felt the same way. It takes me a long time to go through the isles of the grocery store, looking for new products to try, reading ingredients, and making the decision to try one new product over all the others. It’s much easier and safer to stick with what you know. That’s one of the main reasons why this box was so satisfying… I got to try new products without spending the time or energy at the store. Many of the products in the box are snack size, which are often unavailable in stores.

After getting over the initial enjoyment of unpacking the box, the next test was to find out if I actually liked the snacks.  It was definitely more sweets/chocolate than I typically buy during a month period, but the deal is so good, I would feel fine about giving away an item or two to friends or clients (anything I didn’t want to keep in my kitchen, tempting me in the middle of the night)!Uptons-Naturals-BBQ-Jackfruit

So far I’ve tried the first 6 on the list above. The Bar-B-Q Jack Fruit is by far my favorite discovery thanks to this vegan snack box. All I can say is WOW! I’m not sure how long it would have taken me to have bought and tried that one on my own. I plan on giving it a full review on my blog soon because I liked it so much. My second favorite was the PB&J Bar (amazing on-the-go snack), followed by the Peanut Butter Cups. The Chocolate Bar was incredible too. The Fruit Roll-Up was so tiny it was hard to judge (I have a feeling even a full size one wouldn’t make enough of a snack to be worth it.) The Protein Chips were the only snack I didn’t enjoy… they tasted like crispy cardboard. veganegg Follow Your HeartI had been eager to try the VeganEgg since it came out months ago so I was thrilled to get this sample. I scrambled the VeganEgg as directed and it came out with the look, feel, and I think taste (it’s been 20 years since I’ve eaten egg) of scrambled eggs. The creamer will be opened when my mom comes to visit soon (she is a coffee and creamer person. And last, the chocolate cake is something I’ll make when the spirit moves me… I’m psyched it’s so easy to make though!
