Sersie’s Story:
Like many of you out there, Sersie Blue is an overcomer of a profound personal tragedy, which she experienced after health issues during her second pregnancy. It was in this difficult season of her life she realized a deeper need for the Lord and decided to lean into Him more and participate in a one-month Daniel Fast. Little did she know that this simple decision would transform her life. But God knew! It turns out that combining intentional prayer with a whole-food, plant-based diet was a divine bridge to a breakthrough. From this, “The Faithful Vegan” was born. Sersie also hosts the Eat Your Best Life podcast.
Seeking after God from an early age, Sersie graduated from the University of Windsor with a Bachelor’s degree in Communications. She went on to Tyndale College & Seminary, graduating with a Master’s of Divinity in Counseling, and has also completed the health coach program from Wellcoaches at the University of North Florida.
Sersie continually seeks knowledge and wisdom that supports her personal growth and that of others. In addition, she is co-author of A Prayer for Your Health Journal. As you can see, her passionate pursuit of God, wellness & coaching comes together in co-founding Daniel Fast: A Bridge to Healthy Living.
Gigi’s Story:
With a passion for all things wellness, Gigi Carter finds her purpose in helping people come up higher in their pursuit of excellence in health and lifestyle. Her enthusiasm and expertise are evident as one of the masterminds behind the creation of Daniel Fast: A Bridge to Healthy Living.
She is the Founder of My True Self, the socially conscious nutrition and wellness practice—where she serves clients as a consultant, nutritionist, and personal trainer. She achieved all of this after 22 years in corporate management roles! She made the switch in 2016 to pursue her Master’s in nutrition sciences from the University of Alabama at Birmingham and graduated with honors.
Gigi is a Licensed Nutritionist in the state of Washington and certified personal trainer and senior fitness specialist with the National Academy of Sports Medicine. Oh yes, she is also the author of The Plant-Based Workplace, co-author of the children’s book The Spinach in My Teeth, and co-author of A Prayer for Your Health Journal. A graduate of The Natural Gourmet Institute, Dustin has worked in plant-based recipe and brand development in addition to serving as a private chef, cooking instructor, and culinary director for the Atlanta health food chain Arden’s Garden. He is currently the Culinary Specialist with the Physicians Committee for Responsible Medicine.

More About Simon:
Simon Hill is a Physiotherapist and Nutritionist who is passionate about making nutritional information simple and accessible so that people can make informed decisions about the food they feed themselves and their families.
In 2008, Simon completed a Bachelor of Physiotherapy and immediately began working as a Sports Physiotherapist in Melbourne both at a leading private practice and with professional AFL & VFL footballers.
Over the years, however, Simon became increasingly curious about the role nutrition played in nourishing the body and preventing disease. By using his research skills developed during his honors degree, Simon dove deep into the available literature on nutrition & disease and soon became fascinated by the vast evidence out there that proved that simple lifestyle changes could help people prevent and sometimes even reverse many of the leading chronic diseases that plague the western world today.
Concerned with the fact that this information was not reaching people but was instead getting lost amidst the myriad of marketing ploys pushed by industries who were more interested in profits than the health and general well-being of the public, Simon shifted gears in his career undertaking a Plant-Based Nutrition Certificate and a post-graduate degree in Nutrition.
During this time, he set up plantproof.com and began hosting world-renowned doctors and public figures, such as Neurologist’s Dean & Ayesha Sherzai, MD, Dr. Will Bulsiewicz, MD, Dr. David Katz, MD, Environmental Researcher Nicholas Carter, Climate Scientist Dr Jonathon Foley, and Ultra-Athlete Rich Roll on the Plant Proof podcast.
Over the course of the past decade, Simon’s mission has become clearer and clearer. Most of the time, nutrition is spoken about in isolation from other major world issues, despite an enormous degree of interconnectedness. Just as our food system is a human health issue it is also a human and animal rights issue. Just as climate change is a planetary health issue, it is a human rights issue.
Through the Plant Proof channels, Simon’s hope is that more of us will work together to creating a more equitable, beautiful and peaceful world. Something we are proud of today, and something future generations continue to enjoy. And this starts with becoming more connected, more informed, more mindful, and more conscious.

One of my very first opportunities to be interviewed was given to me by Victoria in 2016 for her Mainstreet Vegan Radio show (now also a podcast)!

Besides being all-around badasses, my friends Dani Taylor and Giacomo Marchese are co-founders of VeganProteins.com, as well as PlantBuilt.com, a nonprofit organization of strength-based vegan athletes who compete together to raise awareness for veganism and money for rescued animals at farm sanctuaries.
Dani Taylor is a natural bodybuilding figure champion who grew up in a very unhealthy household and reached 210 pounds by high school. After going vegan for ethical reasons, she began to lose weight and soon found a love of weight-lifting.  The combination of a plant-based diet and lifting caused her to lose 90 pounds and turn her health around, eventually going on to win multiple figure competitions.  Since then she has become a certified strength and conditioning coach and has coached over a thousand other vegans on their own bodybuilding journeys.  
Giacomo has been vegan for over 10 years and involved with fitness for over 20 years. He actively competes in bodybuilding and powerlifting, is a master coach and trainer, and holds a certificate in Plant-Based Nutrition from Cornell University
Together they are a powerhouse couple making waves in the vegan fitness world, all while spending time and energy raising awareness and supporting other animal rescue organizations.
